At Umami Bioworks, we are pioneering cultivated, 'not caught' seafood by developing the production system for delicious, nutritious, and affordable cultivated fish, starting with IUCN Red Listed species that are difficult to farm and being driven extinct by human consumption. Umami Bioworks is looking to hire an inquisitive, innovative, and independent Food Scientist to join our R&D team in India.

About the Role:

We are seeking an experienced and innovative Food Scientist to join our team. The ideal candidate will have 5-10 years of experience in food science, with a strong background in seafood product development and a passion for sustainable food solutions. This role involves working closely with our R&D team to develop and optimize applications of our cultivated seafood technology, enabling our clients to produce their own high-quality seafood products.

Key Responsibilities:

  • Technology Application Development: Lead the development and optimization of applications for our cultivated seafood technology, ensuring they meet high-quality standards and align with market needs.
  • Research & Innovation: Conduct research to understand the properties and potential applications of cultivated seafood, identifying opportunities for innovation and improvement in the technology's applications.
  • Process Optimization: Work closely with the R&D and production teams to guide the optimization of the cell culturing process for various applications based on product and market requirements, ensuring efficiency, consistency, and scalability.
  • Technical Support: Provide technical support to clients, helping them understand and effectively use our cultivated seafood technology in their product development processes.
  • Client Collaboration: Collaborate with clients to ensure the successful integration of our technology into their production processes, understanding their needs and ensuring our technology's applications meet their expectations.
  • Sensory Evaluation: Design and conduct sensory evaluation tests to assess the quality and potential applications of products created using our technology.
  • Regulatory Compliance: Coordinate with our Regulatory Affairs team to ensure all aspects of the technology's applications comply with relevant food safety and regulatory standards, maintaining accurate documentation and records.
  • Cross-functional Collaboration: Collaborate closely with business development and production teams to align technology application development with business strategies and market demands.
  • Continuous Improvement: Stay up-to-date with the latest advancements in food science and cell-culturing technologies, applying new knowledge to drive continuous improvement in our technology's applications.

  • Strong analytical & technical problem-solving skills: especially related to product formulation, texturization, and attribute improvement.

  • Innovative Thinking: Bring creativity and innovation to identify new uses and applications for our cultivated seafood technology in various high-end product categories.
  • Self-management: proven ability to determine next steps and prioritize your work based on key objectives and company priorities.
  • Communication: Strong communication skills with proven capability with multiple internal and external stakeholders.
  • History managing projects, including rapid iterative development programs (i.e. Agile) and their application within the context of technical development projects.

Experience:

  • Experience: 5-10 years of experience in food science, product development, or a related field, with a strong background in seafood product development.
  • Education: Bachelor’s degree in Food Science, Food Technology, Biotechnology, or a related field. A Master’s or PhD is a plus.
  • Prior experience with launching new products or categories is strongly preferred.
  • Experience with owning and shaping a product in prior roles is strongly preferred.
  • Exposure to seafood products is strongly preferred.
  • Knowledge: In-depth understanding of food science principles, sensory evaluation techniques, and regulatory requirements. Experience with cell-culturing or alternative protein technologies is a plus.
